We’re a family-run ranch rooted in generations of commitment to the land, the animals, and the people we serve. Our roots stretch back over 28 years raising healthy, nutrient-dense beef that our direct-to-consumer customers trust and love. From our pastures in Iowa to our family homestead here in North Dakota, everyday life is centered on caring for our cattle the way we believe they should be raised — outdoors, with room to roam, grazing, with minimal human intervention.
Meet Our Cattle — Highland x Longhorn
One of the most striking things you’ll notice on our ranch is our herd. We raise a cross of Scottish Highland and Longhorn cattle, blending the gentle nature and adaptability of Highlands with the foraging strength of Longhorns. These cattle are built to thrive on pasture, and they do it year-round: grazing fresh grass in the growing seasons and quality hay during the winter.
Scottish Highland’s iconic long, shaggy coat and rugged build aren’t just for show — they help these animals stay comfortable through North Dakota’s coldest months, keeping stress low and health high.
Pasture First
Our cattle spend their whole lives on pasture, which is at the heart of what makes our beef special. Access to diverse grasses and natural forage helps them grow at a slower, more natural pace — and that’s part of why our beef tastes so rich.
Careful Aging for Deep Flavor
Once the cattle are harvested, we take extra care with what happens next: dry-aging our product. All of our beef is dry-aged for at least 14 days, a process that subtly intensifies flavor and improves tenderness in ways you don’t get with typical supermarket meat. It’s all done by our local butcher in a temperature and humidity-controlled environment to make sure each cut reaches full potential.
